Amaulu Curry

This week we have a very special guest doing great things in the Hilo community. Chad Cabral CEO of the Boys and Girls Club of the Big Island joins us in the Cooking Hawaiian Style kitchen. He created an after school program to feed kids who need meals. The program cost families $10 a year and he has figured out a way to get the rest covered through donations. They are not providing snacks but hot meals with a kitchen that was funded by federal grants. Chad and his staff have already provided an estimated 28K meals since 2017. Instructions

First – Brown/Sauté (in the InstantPot)

  • Chicken Thighs (with skin and bone-in) / 5-7 pieces of thighs
  • Onion (1 large regular onion)
  • Garlic ( 5 cloves)
  • Garlic Salt (to taste)
  • Pepper (to taste)

 

Add-in and Sauté

  • Portuguese Sausage (1 large mild)

 

Then Add-In

  • Beef Broth (3-4 cups)
  • Diced Tomatoes (1-can)
  • Carrots (1-bag baby carrots) / 12oz baby carrots
  • Celery (3 stalks)
  • Purple Sweet Potatoes (3-4 small/medium sized)
  • Pinto Beans (1-can)
  • Dark Red Kidney Beans (1-can)
  • Cabbage (half a head)
  • Mild Curry Block (1- Block)

Set Instant Pot to “Meat/Stew” setting for a 35-minute pressure cook.
