Jerry Correa is back in the Cooking Hawaiian Style kitchen sharing his recipe. Jerry is the CEO of the St Francis health care systems of Hawaii and is very involved in the community helping our kupuna. I was lucky enough to work with Jerry and his team with the Show Aloha Challenge campaign created by Mike Gangloff. We partnered with Meals on Wheels, and St Francis health care systems to feed as many kupuna as we could during the pandemic. The Show Aloha Challenge raised money to fund our mom and pop’s restaurants to cook the meals and help them stay open. St Francis and Meals on Wheels facilitated the meals daily to make sure they got delivered to our seniors in all of communities from Oahu, Maui, Molokai, Lanai and Big Island. Mahalo to Jerry and his staff for keeping the campaign going.

Instructions

Cut your pork butt into slices. Combine with ingredients in a bowl. Marinate in the refrigerator for 2 days. Smoke for 2 hours at 200°.
